She adopted both of her daughters with her ex-fiancé, Joel Schiffman, and has spoken openly about how becoming a mother later in life transformed her. While she initially had plans to adopt a third child, those aspirations were put on hold in 2022 due to the COVID-19 pandemic.
Now, with more time on her hands, Kotb has hinted that she’s open to revisiting the idea of adoption. In a recent interview with E! News, she was asked if she still had plans to welcome another child into her home. While she didn’t give a definitive answer, she also didn’t rule it out.
“You know what I say about life and things like that, I think it’s sort of in God’s hands,” she responded.

“It’s not like going to Mexico with your girls, which is fun, but this is something that when you leave, you’ll go like, ‘Oh my gosh. I feel transformed. I feel different,'” Kotb explained.
The idea for this new career path has been developing for a while. In October, she told her Today with Hoda & Jenna co-host, Jenna Bush Hager, that she was eager to enter the wellness space.
“I want to live in wellness. I want to work in that space. I want to start things,” she said at the time. “I’ve got things that are percolating inside that I’m gonna, hopefully, have fully formed soon.”

Kotb admitted that she was initially skeptical about certain wellness practices, but after incorporating them into her life, she noticed a significant improvement in her overall well-being. “I started doing stuff that I thought seemed woo-woo and weird, and then all of a sudden as I was doing it, I was like, ‘Wait, I feel calmer, I feel better,'” she said.
